Sheet Pan Sausage and Vegetables

Hey everyone! I hope you all had a great week! This week went by fast for me. Somehow I feel like I’m busier working from home then I was when I was going into the office. Maybe it’s because when I’m home I’m constantly wanting to create and learn. I will figure out a good balance eventually. I think that getting used to the whole working from home thing has been a process. I’m sure that when I have it more figured out, I will end up going back to work. haha!

This year has been nothing short of interesting. So much good has come from it though. Even if it’s come with its own set of challenges, I believe being challenged and growing is inevitable and good. At least for me, it is! It pushes me to trust God more and get to know Him in a deeper way. I always walk away from a challenge feeling so full. He is good no matter what is happening around me, that’s something I have seen and it brings me peace knowing that I don’t have to face anything alone.

Goodness! I’m sure you clicked on this post to get a recipe and not hear about what I’m experiencing in life. I really just couldn’t help it. I felt like I needed to write that, so there you go! Now, let’s get to the recipe! 😉

Here are all of the ingredients! I love this recipe because of how simple it is. Feel free to swap out the green beans for broccoli and the potatoes for sweet potatoes. Just have fun with it!

Here is the final product! Feel free to double this recipe for meal prep!

INGREDIENTS:

  • 1 onion, chopped
  • 1-2 pounds green beans
  • 8-10 small potatoes cut into fourths or 3-4 large ones
  • 4 sausages, sliced into rounds (I like Aidells Sausage)
  • 2 garlic cloves, minced
  • 2 TB avocado oil or olive oil
  • 1 tsp sea salt
  • 1/2-1 tsp rosemary
  • 2 tsp Italian seasoning
  • pepper to taste

DIRECTIONS:

Cut everything up and place in a large bowl with a lid. Put oil and seasonings in the bowl, place the lid on the bowl and shake until everything is mixed together. If you don’t have a bowl with a lid, you can also do this in a Ziploc bag.

Place everything on a sheet pan lined with parchment paper. Cook at 400 degrees for 40-45 minutes. Make sure to flip everything halfway through. Enjoy!
