Blueberry Kiwi Smoothie

Happy Friday! I hope you guys have had a great first week of spring! In honor of spring I thought it would be fun to share a smoothie with you guys! I’ve been addicted to blueberries and kiwis lately so I decided to combine the two and make a smoothie! Let’s get to it.

I always try to sneak frozen veggies into my smoothies, so in this particular smoothie, I used cauliflower! If you haven’t tried frozen cauliflower before, it may sound weird, but you can’t even taste it! It makes your smoothie extra creamy without any added flavor! Some other vegetables that I like adding to my smoothies are zucchini, squash, pumpkin, spinach, kale, and bell pepper. If they are on the verge of going bad, I just throw them in the freezer and use them in a future smoothie. It works out great! Frozen avocado is also great in smoothies but I know it’s a fruit, not a vegetable.

Ingredients

  • 1 cup water
  • 1 cup frozen cauliflower (the riced kind is easier to blend)
  • 1 kiwi (I leave the skin on)
  • 1/2 cup frozen blueberries
  • 1 scoop of collagen (I like the kind by Vital Proteins)
  • 1 TB Chia seeds
  • Handful of walnuts

Instructions

  1. Throw all of the ingredients into a blender and blend on high. Enjoy!
