My Favorite Weeknight Tacos

Kendall and I usually have tacos at least once a week. Sometimes twice and occasionally three times! No shame here. 😉 haha. We eat tacos a lot and I have tried many different combinations but I have found, the simpler, the better!

I can’t eat dairy, but Kendall can and I don’t think he even added any cheese or sour cream to these tacos because the flavors already work so well together. Although, if you want to add sour cream and cheese, go for it! We like to put cabbage, tomatoes, avocado, red onion, cilantro and a squeeze of lime on ours.

I love these corn tortillas for this recipe. I had never tried the taco sliders from this brand, but they were on sale for a dollar! For that price, I couldn’t pass up giving them a try! I really liked them and will definitely be repurchasing them for more taco nights in the near future. 🙂

Most of the toppings after they were chopped. I can’t wait to make this in the summer and then I can top it with garden-fresh tomatoes and cilantro! It’s going to make this taste even better.

We added cabbage this time and really liked it! I don’t know, what do you guys think of adding cabbage to tacos? Weird or not? I like hearing what other people put on their tacos and just dishes in general.

Here are the tacos after they are all finished! I really liked these tacos with ground beef, but I think next time, I am going to try this with chicken to switch things up a bit! 🙂

Ingredients:

  • 1 lb Ground Beef
  • 1 Avocado, Diced
  • 1/2 Red Onion, Diced
  • 1 Cup Cherry Tomatoes, Quartered
  • Cilantro, Chopped
  • Green or Purple Cabbage, Chopped
  • 2-3 Limes
  • 1 bag Corn Tortillas

Other Additional Toppings: Black Beans, Cheese, and Sour Cream

Taco Seasoning:

  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Pepper
  • 1 Tablespoons Olive Oil
  • 2 Teaspoons Ground Cumin
  • 1 Teaspoon Smoked Paprika
  • 1/2 Teaspoon Chile Powder
  • 1/2 Teaspoon Garlic Powder
  • 1/2 Teaspoon Onion Powder

*You can also use premade taco seasoning for this recipe.

Directions:

  • Mix seasoning in a bowl. Cook and drain ground beef and add seasoning in once the meat is done.
  • Fry tortillas in a pan and top with meat and desired toppings.
  • Enjoy! 🙂
