Pumpkin Cranberry Bread

Oh, fall, how I love you. All the smells, the colors, and the crisp air. Everything about fall makes me giddy. I used to think summer was my favorite season. I was definitely in denial because I now know the best season is. Beyond a shadow of a doubt, it is fall.

Fall has many perks but I think one of my favorites is that baking daily is now socially acceptable… or at least I would like to think so. 😉 I baked this pumpkin bread earlier this week and I had a few messages on Instagram for the recipe so I decided to share it with you guys on here!

Here are all the ingredients minus the flour, baking soda, canola oil, baking powder, and the cranberries.

Here is the canned pumpkin I used! Feel free to use your favorite kind or whatever you have on hand.

I used cranberries in this recipe but pomegranate seeds or chocolate chips would be good in this recipe as well.

Here is the bread straight from the oven! I let it cool for 15 minutes and then ate a few slices. 😉

INGREDIENTS:

  • 2 eggs
  • 1/4 cup almond milk (or any milk you’d prefer)
  • 1 15 ounce can pumpkin puree
  • 1 Tablespoon canola oil
  • 1/2 cup unsweetened applesauce
  • 1/2 maple syrup
  • 2 teaspoons vanilla extract
  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 cup dried cranberries (optional)

Spices:

  • 2 teaspoons ground ginger
  • 2 teaspoons cinnamon
  • 1/2 teaspoon pumpkin pie spice (optional)
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon kosher salt

DIRECTIONS:

  • Start off by preheating the oven to 325 degrees. Then, mist a 9 by 5-inch pan with oil, set aside.
  • Grab two medium bowls and put the eggs, milk, pumpkin puree, oil, applesauce, maple syrup, and vanilla into one of them. Wisk until combined.
  • In the other bowl, add the flour, ginger, cinnamon, nutmeg, salt, baking soda, baking powder, and pumpkin pie spice. Mix until all the spices are combined.
  • Pour the wet ingredients into the dry and stir with a spatula. Make sure you mix well. Then add the cranberries and gently fold into the mixture.
  • Pour the batter into the prepared loaf pan and bake in the oven for 60-80 minutes. Check with a toothpick to determine whether or not the bread is done.
  • Let cool for 15 minutes and serve with butter. Enjoy!
