    Easy Homemade Granola

I was trying to find a granola recipe at the store the other day and I couldn’t find one that had simple ingredients. I decided to challenge myself to create one that was easy to make and that was filled with simple ingredients. I looked through my cabinets and in my fridge and pulled out a few ingredients that I thought would work well together and to my surprise, I came up with some pretty tasty granola! As usual, when I create or find a recipe I like, I have to share it with you guys. So, let’s get to it! Here are most of the ingredients, minus the cinnamon.…

    Dairy-Free Blueberry Muffins

Hey guys! Happy Friday! I’m pretty sure I say this in every post, but I can’t believe how fast this month has flown by! I finally started going back to the office for work (at the beginning of this month), I’m still doing school online, and Kendall and I have been doing small updates on our rental side. We have someone moving in on July 1st so we’ve been trying to get that done. Anyway, I just wanted to give a brief update on what we’ve been up to. Besides school, work, and projects, I’ve been experimenting with a few different recipes. The other day, I wanted to use up…

    Berry Oatmeal

I have to admit something, I used to dislike oatmeal. I know some of you may think I’m crazy for saying that, but I always thought it was bland. Honestly, it was bland, but that’s because I wasn’t adding any good toppings to it. After a lot of trial and error, I have created a recipe that I love and now, I eat oatmeal pretty much every morning! Here are all the ingredients you’ll need! If you would prefer bananas over berries, the banana walnut combo with some almond butter also tastes delicious. I have been loving eating warm oatmeal with fresh berries every morning. I hope you enjoy this…

    No-Knead Artisan Bread

I posted this recipe on Instagram stories a couple of days ago. I had such a great response to this recipe that I wanted to share it here as well. If you ever want to find the recipe on Instagram, I have a highlight dedicated to homemade bread so it will be there archived on there as well. I hope you enjoy! For this recipe, you will need these three ingredients and water. I’ve had a few people message me that they can’t find bread flour during this time.  Which is okay! Use what you have on hand. Regular flour and whole wheat flour will work as well! After I…

    Toscana Soup

I was originally planning on doing a homemade bread recipe today but I decided to move that to tomorrow and do this Toscana soup instead. Apparently, this soup is a favorite from Olive Garden! If you’ve had it at Olive Garden you should let me know how this compares to it. I did end up switching up the ingredients a bit to make this recipe dairy-free but I will make sure write in the original ingredients as well. I hope you’re all surviving this quarantine and enjoying this extra time with your family. If all else fails, cook something! A good meal makes everything better. 😉 Here are all of…

    One-Pot Cajun Chicken Pasta

I’m not sure if I’ve ever mentioned this before but every dish I make or post on my blog is dairy-free.  I do this because of my allergy to dairy.  So, if you’re also dairy-free or are trying to cut back on dairy, I have a ton of recipes that I can share/will be sharing over time here on the blog.  I just thought I would throw that out there! Also, if you want dairy in your dishes, it’s easy to swap out the oil for butter or the coconut cream for heavy cream! As far as gluten goes, I still cook with gluten but will occasionally make a dish…

    Homemade Chicken Noodle Soup

If you follow me on Instagram, you probably already know my obsession with soup. The other day, I was trying to think back on what I had eaten over the last two weeks and the majority of my meals consisted of soup! haha. I’m not complaining though because soup is delicious. Today, I wanted to share my current favorite chicken noodle soup with you guys. Let’s get to it! I always have to do Mise en place before I start cooking! Culinary taught me well! When everything is pulled out and measured ahead of time it makes cooking a lot quicker. I usually end up making a majority of my…

    Pumpkin Cranberry Bread

Oh, fall, how I love you. All the smells, the colors, and the crisp air. Everything about fall makes me giddy. I used to think summer was my favorite season. I was definitely in denial because I now know the best season is. Beyond a shadow of a doubt, it is fall. Fall has many perks but I think one of my favorites is that baking daily is now socially acceptable… or at least I would like to think so. 😉 I baked this pumpkin bread earlier this week and I had a few messages on Instagram for the recipe so I decided to share it with you guys on…

    Potato Breakfast Bowl

I’ve been on a breakfast kick lately. Usually, I’m pretty boring when it comes to breakfast. I either have scrambled eggs and toast, oatmeal with berries or a good ol’ smoothie! I don’t mix it up a whole ton, but lately, I’ve been trying different breakfast combinations, and I have to say, I’m really liking switching things up! Today, I thought it would be fun to share one of the recipes that I’ve been enjoying lately. I like eating this recipe in the morning after I workout because it has a good combination of carbs, protein, and good fats. You could also eat this for lunch if you’d prefer. Above…
