Stovetop Cabbage Casserole
Happy Friday everyone! Can I just say what a crazy year this has been? I’m sure I don’t need to remind you but through all the change that this year has brought, I’m still trying to take care of my health. Cooking has been an integral part of that.
I want to keep sharing some easy recipes with you guys to help you out so that you can still make something at home but fairly quickly! The recipe I will be sharing today is easy to make and it tastes good even a few days after you make it. Let’s get to it!
Per usual, here are all or I guess most of the ingredients!
Here is the shredded cabbage! If you don’t know how to shred a cabbage, their are some great videos on YouTube that will give you step by step instructions.
Here is the final dish. I love how comforting this meal is.
INGREDIENTS:
- 1 TB olive or avocado oil
- 1 lb ground beef (grass-fed if possible)
- 2 cans fire-roasted tomatoes ( I like the brand Muir Glen)
- 1 can tomato paste (6 ounces)
- 1 onion, diced
- 1 small head of green cabbage, shredded
- 3-4 cups cooked brown rice
- 2 cups vegetable or chicken stock or broth
- 1 tsp parsley
- 1 tsp thyme
- 1/2 tsp sea salt
- 1/4 tsp pepper
DIRECTIONS:
Start by pulling out all of the ingredients. Shred cabbage into thin slices (like pictured above) and dice onion, set aside.
Next, start by cooking your rice in a pressure cooker or rice cooker. I usually cook 1 cup of brown rice in 1 1/2 cup water or broth with a pinch of sea salt. If I cook it in the pressure cooker, I cook it on high for 23 minutes and let it cook on low for 10 minutes before releasing the lid.
Then, heat up a pan on medium heat and add 1 TB of olive oil or avocado oil. Add the ground beef and onion and cook until browned.
After the meat is done cooking, add in the diced tomatoes, tomato paste, 2 cups chicken broth, 1 tsp parsley, 1 tsp thyme, 1/2 tsp salt, 1/4 tsp pepper. Stir until combined.
Add in the shredded cabbage, put a lid on the pot and let it simmer for 20-25 minutes. After the cabbage is done cooking, add in the brown rice and stir everything together.
Finish by adding additional seasonings, enjoy!
