
Veggie Wrap With Mango Salsa
Hi everyone! Today, I’m sharing one of my favorite easy lunches, my mango salsa wrap! I created this last summer and I find myself gravitating towards it when I don’t have much time for lunch. I usually have the veggies on hand but if I don’t have everything, I just mix and match to create something similar!

My favorite veggies to put on my wrap are cucumber, spinach, cherry tomatoes, pepper, and avocado. Like I said, if you don’t have something on hand or you’re not a fan of one of these, just swap it out for something you do like! 🙂 I also like to put brown rice on mine, but I could see jasmine rice and quinoa both being good swaps!

The secret sauce to this recipe is the mango salsa. Oh boy! This stuff is SO good. I don’t actually like using this salsa to eat with tortilla chips but I like adding it on wraps and in rice bowls. It adds the perfect touch! I also couldn’t do without the roasted red pepper hummus in this recipe. I’ve used both homemade hummus and store-bought and I enjoyed it either way. Just use whatever works best for you. 🙂

Recipe: Veggie Wrap With Mango Salsa
Ingredients:
- 1 Whole Wheat Wrap
- 2 Tablespoons Roasted Red Pepper Hummus (or hummus of choice)
- ¼ Cup Black Beans
- ¼ Cup Brown Rice
- ¼ Yellow Or Orange Bell Pepper
- ½ Avocado
- ¼ Cucumber, Diced
- ¼ Cup Cherry Tomatoes
- Spinach (as much as you’d like)
- Shredded Carrot
- Mango Salsa
Directions:
Heat up tortilla, put hummus and rice on the top of tortilla. Then, add all of your vegetables and top with mango salsa. Enjoy!
Additional Notes: You can add shredded chicken to this if you want more protein.
