
Lemon Chicken Soup With Orzo
Over the weekend, I made lemon chicken soup with orzo and I decided to share the recipe with you guys! I post a lot about food and to be honest, I enjoy creating and sharing recipes with others. I think the most common question I get asked nowadays is, “what’s the recipe?” ha! So, I decided, that I’m going to start sharing more recipes on here. Some of the recipes will be ones that I created and some will be recipes I found online and like. The recipe I will be sharing today was created by Lindsay from Pinch of Yum.

I always lay out all my ingredients before I begin. I learned to do this while I was taking culinary classes. It helps make the cooking process go quicker… or at least I would like to think it does. 😉

I don’t mind chopping veggies but onions and garlic are my least favorite to chop. The onions because I always end up crying and the garlic because it takes a while to mince. I have purchased pre-minced garlic before but there is just something about fresh garlic that I can’t get over. So, I am definitely adding a garlic press to my Amazon list! haha

Someone gave me these eggs a few days ago and I can’t explain how much I enjoy having fresh eggs on hand. I keep joking with Kendall that we need to get chickens someday, I think they would be a great investment. Especially since we eat so many eggs. We don’t really have a place for chickens at this point, but maybe someday we will!

Here is the brand of orzo pasta that I used, although I made this recipe one other time and used arborio rice and I might have liked it even better. So, if you don’t have orzo on hand, rice works well too!

The final step, adding in the spinach. I really like adding spinach into sauces, smoothies, and soups because it adds extra nutrients and you don’t even taste it! I made a goal last year to eat more greens with every meal and this has been a great way to sneak them in. 😉

There you have it! This soup really is a must-try if you are looking for something that is healthy, yet hearty. It is also super easy to make if you use a rotisserie chicken because that cuts down on the cooking time! Anyway, I hope you give it a try and keep your eye out for more recipes coming soon. INGREDIENTS
- 1 tablespoon olive oil
- 3-5 carrots, peeled and diced
- 1/2 yellow onion, diced
- 3 cloves garlic, minced
- 8-10 cups chicken broth or stock
- 1 cup Delallo pasta or arborio rice
- 3-4 cups cooked chicken (I used rotisserie chicken)
- 3 eggs
- juice of 2-3 lemons
- a cup or two of spinach
- 1 1/2 teaspoons salt
- lots of pepper
INSTRUCTIONS
- Base: Heat large soup pot over medium heat. Add the olive oil (1 TB). Add the carrots, onion, and garlic. Saute until fragrant and tender, about 10 minutes.
- Orzo or Arborio Rice: Add the broth and bring to a simmer. Add the orzo or rice (1 cup) and cook for a few minutes until softened. Stir in the chicken and remove from heat.
- Eggs: Whisk the eggs and lemon juice together in a small bowl. Add a cup of the soup into the egg/lemon mixture, then slowly starting adding to the soup in the pot. You want to go slow so the eggs don’t become scrambled.
- Final touches:Â Finish by stirring in your spinach, salt, and pepper.
